Refrigerator Beet Pickles

- 2 cup White Sugar
- 2 cup White Vinegar
- 1 tbsp Pickling Spice
- 1-1/2 tsp Canning Salt
- 1 cup Water
- 5 qt Beets About an ice cream pail full
- Place cooked, sliced beets into the juice and simmer 5 minutes.
- Put in ice cream pail and cover (could use can beets).
- These keep indefinitely in fridge and are so good.
