Glorified Rice Salad

Ingredients
- 2 c Cooked Rice Med. Grain
- 1-1/4 c Cold Water
- 1 c Sugar
- 2 tbsp Cornstarch
- 2 Eggs Beaten
- 5 tbsp Real Lemon Juice
- 1/2 tsp Vanilla
- 1-2 tbsp Butter
- Mini Marshmallows
- Crushed Pineapple Drained
- 2 c Whipped Cream
Instructions
- Cook water, sugar, cornstarch, eggs, lemon juice and vanilla until thick. Watch so it doesn't scorch. Remove from stove to cool. Add butter. When cool, add cool rice, marshmallows, pineapples and whipped cream. Mix, chill and serve.
